Here are some ideas for using kale.
Bon Appétit!
Kale chips
4-5 kale leaves
2 tablespoons of olive oil
½ teaspoon Himalaya pink salt
Preparation
Preheat oven to 4000F. Wash kale and dry with paper towels or in a salad spinner. To get them crispy, the leaves need to be dry. Then remove the stems and tear leaves into small, bite- size pieces. Spread pieces on a baking sheet and drizzle with olive oil. Toss until well coated and spread evenly on baking sheet so that no pieces are overlapping. Sprinkle with salt. Bake for 10 minutes or until crisp.
Green Salad
2 cups mixed greens such as arugula, bitter greens, baby kale, or baby spinach
2 tablespoons extra virgin olive oil
1 tablespoon freshly squeezed lemon juice
Pinch of sea salt
Preparation:
In a bowl, toss the greens with the olive oil, lemon, and salt until well coated.
Kale soup
1 onion
2-3 cloves of garlic
1lb kale
1lb potatoes
1 tablespoon of olive oil
10 cups of water
Chorizo or other sausage
Preparation:
Warm up olive oil in cooking pan and add chopped onion and garlic. Cook until onion is translucent. Add peeled potatoes and cut into small pieces and add 4 cups of water. Cook until potatoes are soft and then mash them with handheld blender. Add kale to the rest of water and then bring to boil and cook until kale or collard is tender. The last step is adding sausage (optional) and add salt and the spices which you like.
Sautéed Kale
2 tablespoons extra virgin olive oil
½ cup sliced red onion
2 cups chopped kale; rib removed
1 teaspoon minced garlic
Preparation:
In large skillet, heat the olive oil over medium heat. Add the onion and sauté for 5 minutes. Stir in the kale and garlic. Sauté for 3 minutes more.
Kale smoothie
1 packed cup kale leaves (discard the thick rib in the center of the leaf)
1 cup unsweetened almond milk
1 date, pitted
Preparation:
Blend everything in a powerful blender until completely smooth and drink immediately.
Green juice
5 large leaves of kale, ribs discarded, leaves roughly chopped
1 lemon, zest and pith removed
1 large apple, roughly chopped
1 sprig of fresh mint
Preparation:
Push all the ingredients through your juicer. Or instead, you can chop all the ingredients and pop them into a powerful blender with ½ cup of water, then pass the mixture through a fine-mesh strainer and drink immediately.
