Red beets soup




    - 1 small or medium carrot
- 1 parsley root
- 1 small onion
- 1 small celery root (or if it is big one just quarter or half depends of the

       size, you do not want add to much)
- 1 small leek
- Young stalks from 6-8 red beets
- 2 small red beets
- Small cut of organic smoke bacon or 2-3 organic pork baby ribs
- Spices: bay leaf, salt and black pepper, 2-4 whole Allspices, 1 tablespoon

       of white vinegar
- 8 cups of water


Way to prepare:


Wash and peel vegetables. Place in pot with smoked bacon or pork ribs and add 8 cups of water, carrot cut for quarters, parsley root, celery root, leek and onion. Add the bay leaf, whole allspices and salt. Bring everything to boil, reduce heat, and simmer, covered, for 20-30 minutes.  Remove onion, celery root, leek and parsley root from the pot and add cut red beets stems and red beet (nice thin columns), bring to boil and then reduce heat and simmer for additional 20 minutes, then adding  vinegar, black pepper and maybe more salt.
